I simply haven't got the words to tell you how amazing Niter Kibbeh is. It's key to most Ethiopian dishes, but it also adds wonderful depth of flavour to just about any savoury dish.
Ingredients
1 part cocoa butter
1 part liquid vegetable oil (e.g. rice bran, olive, sunflower)
Spices, seasons, and flavourings: onion, coarsely chopped garlic, fresh ginger root, turmeric, cardamom, cinnamon, clove, nutmeg, cumin, bay leaf, paprika, chili, and whatever else strikes your fancy
Instructions
Heat over a medium heat. Once it begins to boil, reduce the heat to the lowest possible. Simmer uncovered for at least 45 minutes. Strain. Store in the refrigerator or freezer.
